Exciting Pesto

Why am I so excited about this pesto? This is a perfect opportunity to make something magically nutritious. It is super easy to make and is a perfect accompaniment to so many dishes, making them ever more delicious. Also…. key green ingredients in this dish are probably the easies thing that anyone can grow….. anywhere….. at any point in the year! Herbs can be grown at home on the window seal even in winter. With a bit of forward planning, you can have a constant supply of organic, home grown basil, coriander, parsley and dill. The classic pesto is made out of basil. In this recipe I am using coriander but you can use any other herb. The taste will be completely different. Don’t be afraid to experiment. You might be surprised todiscover a winning combination that works just for you. We all like different things. I could write a love song about herbs. Seriously. They are a very concentrated source of nutrition such at vitamins and minerals and have a huge amount of disease fighting phytochemicals. They have antibacterial and anti-inflammatory properties, help you detox the most insidious offenders such as heavy metals, soothe digestive system, boost immune system, slow the ageing process and on and on and on. It can be difficult to have enough herbs in your diet. Pesto, makes it possible. Add it as a relish to meat, fish and chicken dishes. Use it as a salad dressing. Drizzle it over soup or have it with boiled eggs.

Instructions
  1. Roughly chop coriander
  2. Add chopper coriander, olive oil, peeled garlic and salt to a blender.
  3. Blend until smooth
  4. Add nuts and blend again till smooth.
  5. Transfer to a container with a tight fitting jar.
  6. It should keep in the fridge for about 5 days
